Ingredients
- 300 g of carrots
- 100 g of potatoes
- 60 g of onions
- 300 g of vegetable broth

15 g extra virgin olive oil
Procedure
1.Finely chop the onion and sauté it in a non-stick pan with a drizzle of oil and a little water.
2. Add the thoroughly cleaned and sliced carrot and the peeled and diced potato; cover the vegetables with the vegetable broth prepared earlier or purchased at the supermarket.
3. Cook the vegetables until soft (about 20-25 minutes).
4. Blend with an immersion blender, adding a little salt to taste.
5. Consume the soup at a lukewarm temperature.
We recommend pairing it with croutons and a fresh cheese like feta for a complete and balanced meal.
