The cookie will be soft on the inside, perfect for dunking or eating plain!
FOR THE BASE:
You will need:
1. Your oats (half rolled oats, half flour; just flour; just ground rolled oats). You can also use rolled oats and flours from other grains.
2. Double the weight of banana/yogurt/fruit pulp/pumpkin pulp, or a mix of these. For example, using 50g of oats, you'll need 100g of banana pulp or yogurt, etc.
3. Half a teaspoon of baking powder.
To make it with chocolate, simply add 10/15g of bitter cocoa to the base: in this case, you may need to add 1 tablespoon of milk-water or another 20g of yogurt/banana/pumpkin etc. to incorporate it into the mixture.
Mix all the ingredients well, using a spatula, until you obtain a sticky mixture.
EXTRA
Now you can proceed with all the optional additions:
• fruit pieces: 50g
• 5/10g of coconut or seed oil or 2 teaspoons of your favorite nut butter which will add an extra touch of flavor and texture
• Sweetener: 1 tablespoon maple, honey, stevia or any other.
• Chocolate chips or dried fruit flour or grains or coconut: 10g
METHOD:
Place the dough on parchment paper; you can also use a pastry cutter. It shouldn't be too thin in the center, otherwise it will burn and fall apart. I leave it quite thick (about 12 cm in diameter) so that the inside is nice and soft and firm!
COOKING
• Preheat static oven to 180° for 20 minutes
• Air fryer: 180 degrees for 10-15 minutes
