The original recipe is of Indian origin, certainly much more elaborate, but I decided to draw inspiration from it for this dish that will make chicken breast much more appetizing!
INGREDIENTS (for 2 people):
- 300g chicken or turkey
- 120g Greek or plain yogurt
- Juice of half a lemon
- 1 400g can of peeled tomatoes
- 1 white or red onion
- 20g cashews
- 20g ghee or butter or 2 tablespoons oil
- Salt and pepper to taste
- Herbs and spices (use the ones you prefer and have, according to your taste): garlic powder or a clove of minced garlic / turmeric / paprika / cardamom / cumin / garam masala / ginger powder (or 1 teaspoon of minced fresh ginger)
METHOD:
Dice the chicken and add the yogurt, lemon juice, salt, pepper, and your chosen spices/flavorings. Let it rest.
Heat the ghee/butter/oil in a pan, add the onion and the same spices used previously, and cook until soft. In the same pan with the onions, add the cashews and peeled tomatoes. Cook for 8-10 minutes, then blend the mixture with a hand blender to obtain our sauce.
In the same pan, cook the chicken for 5 minutes over high heat, then add the sauce and cook over low heat for about 8-10 minutes, until it has thickened.
Now it's ready to serve!
